Chefs Mark Jordan from Jersey’s Ocean Restaurant and Pascal Proyart at One O One collaborate in brief Knightsbridge pop up

Over recent years, Jersey has become quite the destination for food lovers. The tiny island is well-known for its seafood and beef and over today and Saturday January 30th, this taste is reproduced in the well-upholstered surroundings of One O One Restaurant in SW1.

With the Michelin stared Ocean Restaurant in Jersey enjoying a brief seasonal closure, chef Mark has taken the opportunity to bring his team – and ingredients – to London. Indeed such is the determination to bring the best, produce was bugling out the side of suitcases and Mark recounted wryly a surreal conversation he’d just had with his personal lobster fisherman on Jersey as to how to get and move 100 lobsters in good order to the big smoke in about eight hours…

That said, the determination is worth it as the results are rather damn good. My seven course tasting menu contained not a wrong note with courses such as scallop, foie gras, sea-spinach with wild mushrooms and vermouth along with Jersey beef, lobster with beef marmite, dauphinoise cappuccino being knock out performers. The scallop was fresh and succulent and even as a not huge beef fan, the cut I was given was pink, juicy and fell apart when attacked. Tangy Jersey cheeses and a delectable chocolate pavé knockout punch also will linger on my taste buds. The cooking is precise and elegant and with each course well-judged in size there is no need to waddle out the door at the end of the meal.

Pascal at One O One, a native of Britanny, is thoroughly enjoying this collaboration – a chance to reciprocate the hospitality he was shown on the island last year. Both chefs smilingly already acknowledge their future collaborations will have to last a trifle longer than this lightening Knightsbridge raid. Prices over the next two days range from a four course tasting menu at £39 through to an eight course experience at £79 per head (matched wines an additional £66 per person).
