Riddle finds out how to make homemade tortelli with spinach & ricotta filling
1kg flour (’00’ or plain)
700g ricotta cheese
300g Swiss chards
200gr 3-6 month Parmesan cheese
A pinch of salt
You don’t have to be a great cook to make homemade dough.
Just mix flour and eggs with a pinch or two of salt. Add water as needed.
Once the dough is made, cover it with a cotton tea towel and leave to rest for 20minutes.
In the meantime, to prepare the filling, put ricotta cheese, chards, Parmesan cheese and 1 egg into a bowl, add 1 pinch of salt and some nutmeg, then mix carefully.
Roll the dough and cut wide strips with a dough cutter.
With a teaspoon, out the filling on the first strip of dough at regular intervals and carefully cover with the remaining dough, creating even sized squares, make sure you seal them properly to ensure they do not open once you place them in water.
Cut the squares with the dough cutter and place on the tortilla on a tray.
Place in a large pan of boiling salted water until they rise to the top. Remove from the pan carefully using a slotted spoon and add butter and sage.
