If you knew then what you know now… would you still do it?
Yes, of course. I love what I do as you’re constantly learning new things, constantly creating. Being a chef is not just a job, it’s a way of life.
What’s the best piece of advice you’ve ever been given?
Make sure you have a balanced lifestyle – both work life balance, and looking after yourself in terms of health. Treats should be just that, everything in moderation.
What’s the weirdest rumour you’ve ever heard about yourself?
I really don’t think I’ve heard one!
What was your biggest break?
Winning commie chef of the year in New Zealand, from that I got the opportunity to be part of the culinary Olympic team that won the silver medal in Japan. It was a pretty special experience and really catapulted my career.
Do you consider yourself lucky?
I think you create your own luck and destiny, but yes, I feel pretty lucky and happy with my life right now.
What’s most important in your life?
What brands/chefs do you admire?
Simon Rogan and René Redzepi, both have really bought the foraging scene to the fore in a very creative way, something that I’m particularly passionate about. I’m also a fan of Peter Gilmore at the Quay restaurant in Sydney.
