An Al fresco Haven for Gin and Cocktail Lovers alike
The Blackbird launches the Bombay Sapphire Gin Hut for the summer

Leven Street’s ‘The Blackbird’ does not need any introduction (for Edinburgh locals anyway). Renowned for a luxurious beer garden and very shareable food, the Blackbird has become a bit of a staple in recent months. This summer, the expansive outdoor space has been transformed into the Bombay Sapphire Gin Hut and is perfect for al fresco sipping.
The collaboration between the Blackbird and Bombay Sapphire has resulted in the development of four indulgent cocktails, each inspired by the gin’s roots in South Asia. Of course, at the forefront of the drinks offered is a Perfect Serve, lashings of Bombay Sapphire served with fresh lime and Fever Tree Tonic – what’s not to love?
The Mango and Cardamom Fizz is a refreshing and dangerously drinkable introduction to Asian inspired cocktails. Preserved mango with cardamom and celery bitters results in an interesting balance of sweet and savoury. The Peach and Lemongrass Buck is, as the name suggests, a close relative of the classic Gin Buck. Simple and delicious – my favourite of the night.
Finally, the Raspberry and Pankot is a no-holds-barred combination of coconut milk, raspberry, rose water and lemon bitters. This was far too sweet for my taste and I always find milk based cocktails too sickly to finish. Nevertheless, my drinking partner enjoyed the raspberry undertone of the drink.
The cocktails are served in plastic cups – we are outside after all – with rounded lids. Not one to miss a trick, all of the Gin Hut’s drinks are extravagantly garnished and resemble little alcoholic terrariums.
Not stopping at the drinks, the Blackbird commissioned Mr. Doodle to adorn the Gin Hut with ‘graffiti spaghetti’. There’s a sentence I never thought I would write… The resulting mural is just as extravagant as the drinks and quite the talking point.
